Almond bites recipe

Serves 4 persons

Cooking time: 8 minutes

  1. Preheat oven to 160˚C/320˚F/Gas Mark 3.
  2. Mix the oatmeal, chopped almonds and dessicated coconut together and spread in a single layer on a baking tray. Bake for 6-8 minutes until golden, then remove from the oven and allow to cool.
  3. In a medium sized bowl, melt the almond butter in a microwave for 30 seconds. Add the cooled baked oats and nuts along with the honey and cranberries. Mix well and form into balls using damp hands. Refrigerate until firm and store in an air tight container for up to one week.
