Cooking time: 15 minutes
- Cook rice according to packet instructions.
- In a bowl combine the chopped tomatoes, onions and coriander.
- Drizzle lime juice on top and set aside.
- Heat the oil in a large pan over medium heat.
- Add the prawns, cumin, chilli powder and cayenne pepper and cook for 5- 7 minutes or until cooked through.
- Remove prawns from pan and set aside.
- Now add the beans, 2 tablespoons of liquid and remaining cumin to pan.
- Cook for 3 - 4 minutes and mash beans well with a fork.
- Heat the tortillas in the microwave for 5 - 10 seconds.
- Divide bean mixture, rice, prawns and avocado evenly among the 4 tortillas.
- Top with the diced onion, tomato, coriander mixture and serve with side salad.
