Kale soup 520x400

This is a delicious take on a traditional potato and leek soup.

Serves 4 persons

Cooking time: 25 minutes

  1. Heat the olive oil or butter over a medium heat.
  2. Add the onions and sauté for about 10 minutes until they start to soften and look a little clear. 
  3. Add the potato and sauté for 5 minutes. 
  4. Then add the kale and the stock and cook for 10-15 minutes until the potato is soft. 
  5. Blend the soup and add the milk to get the consistency you want (a thicker or thinner soup). 
  6. Season with some pepper and serve.
