
This is a delicious take on a traditional potato and leek soup.
Serves 4 persons
Cooking time: 25 minutes
- Heat the olive oil or butter over a medium heat.
- Add the onions and sauté for about 10 minutes until they start to soften and look a little clear.
- Add the potato and sauté for 5 minutes.
- Then add the kale and the stock and cook for 10-15 minutes until the potato is soft.
- Blend the soup and add the milk to get the consistency you want (a thicker or thinner soup).
- Season with some pepper and serve.
