Day 49 - Paprika Pork Tenderloin With Potatoes

Butter

25 millilitre

Method

  1. Preheat oven to 180°C/160°C fan/gas mark 4.
  2. Add peeled potatoes to a pot of boiling water and simmer until cooked for approximately 15-20 minutes.
  3. Once cooked drain water from potatoes and mash with milk and butter.
  4. Combine paprika, smoked paprika and 2 teaspoons of olive oil to make mixture.
  5. Rub mixture over pork, cover with kitchen foil and place in oven for 30 - 40 minutes until cooked through.
  6. Put remaining oil into a pan, add crushed garlic and green beans. Sauté until tender.
  7. Take pork out of oven, slice and serve with the mashed potatoes.
