Day 43 - Mustard Baked Salmon

Ingredients

Carrots
1 - peeled and chopped

2 fillets 240g

Natural Yoghurt
2 tbsp 3% fat

Savoy Cabbage

Method

  1. Preheat oven to 200°C / 180°C Fan / gas mark 6.
  2. Place baby potatoes in a pot of boiling water and simmer until cooked for approximately 15-20 minutes.
  3. To make the sauce combine natural yogurt, wholegrain mustard and vinegar in a bowl.
  4. Add the salmon fillets to the bowl, coat well with the sauce and place aside.
  5. Place salmon fillets on a baking tray and cook in the oven for approximately 10 minutes until cooked through.
  6. Steam carrots and cabbage for approximately 6-8 minutes until tender.
  7. Remove salmon from the oven, top with dill and serve with potatoes and vegetables.
