Aubergine
1 - chopped

Centra Chopped Tomatoes in Tomato Juice 400g
350 g

1 tsp

Centra Spaghetti
100 g wholemeal

Chicken Breast
2 - cut into 2cm dice

Parmesan Cheese
1 tbsp grated

Pitted Olives
2 tbsp

Salted Capers
1 tsp

Sun Dried Tomatoes
4 - drained and chopped

Method

  1. Cook pasta according to packet instructions.
  2. Add oil to pan over medium heat, add chicken and fry until cooked through.
  3. Add aubergine and cook with chicken for 2-3 minutes.
  4. Add in crushed tomatoes, olives, capers, and sundried tomatoes.
  5. Bring to a simmer, stirring regularly until chicken is cooked through and vegetables tender.
  6. Add basil and stir through.
