Day 33 - Chilli Cod With Roasted Cabbage

Centra Baby Potatoes
200 g

1 - thinly sliced

0.5 - thinly siced

Mayonnaise
2 tbsp

1 - thinly sliced

Pickled Jalapeño
4 - (from a jar), chopped

Method

  1. Steam potatoes until tender (15-20 mins).
  2. Preheat oven to 180C.
  3. Toss the cabbage, peppers and onion in a bowl with ½ a teaspoon of oil.
  4. Scatter the vegetables on a non-stick baking tray and roast until tender for 15-20 mins.
  5. Transfer to a large bowl and add half the lime juice.
  6. Add remaining oil to baking tray and place cod fillets on it.
  7. Sprinkle half the chilli powder on top of cod fillets.
  8. Place cod in oven and cook for 10 minutes or until cooked through.
  9. In a bowl combine mayonnaise and remaining lime juice with the chopped coriander, jalapeños and the remaining chilli powder.
  10. Serve fish with mayonnaise sauce, vegetables and potatoes.
