Day 30 - Prawn And Black Bean Tacos

1 tub drained, retaining 2 tbsp of liquid

Method

  1. Cook rice according to packet instructions.
  2. In a bowl combine the chopped tomatoes, onions and coriander.
  3. Drizzle lime juice on top and set aside.
  4. Heat the oil in a large pan over medium heat.
  5. Add the prawns, cumin, chilli powder and cayenne pepper and cook for 5- 7 minutes or until cooked through.
  6. Remove prawns from pan and set aside.
  7. Now add the beans, 2 tablespoons of liquid and remaining cumin to pan.
  8. Cook for 3 - 4 minutes and mash beans well with a fork.
  9. Heat the tortillas in the microwave for 5 - 10 seconds.
  10. Divide bean mixture, rice, prawns and avocado evenly among the 4 tortillas.
  11. Top with the diced onion, tomato, coriander mixture and serve with side salad.
