Day 23 Seared Salmon With Sautéed Lentils And Vegetables

Ingredients

Carrots
3 - peeled and chopped

100 g roughly chopped

100 g drained

Red Wine Vinegar

Method

  1. Add 1 ½ tsp oil to a pot over medium heat.
  2. Add garlic and cook for 1 minute, stirring to prevent burning.
  3. Now add kale, carrots, vegetable stock and red wine vinegar.
  4. Cook until tender for about 12 - 15 minutes, stirring often.
  5. Add lentils for last 3 minutes to heat through.
  6. In a skillet / pan place remaining oil on medium to high heat, season salmon with a little salt and pepper and fry for 3 - 4 minutes per side until cooked through.
  7. Serve salmon over lentil and vegetable mixture.
